Ageing:

Following malolactic conversion, the Brunello di Montalcino Riserva is aged in small Slavonian and French oak casks for around 40 months to ensure velvety tannins and well defined flavour and aromas

Bottle Ageing:

6 months.

Tasting and Pairing:

Deep ruby red to garnet in colour. Elegant and intense on the nose. In the mouth, full, warm and persistent, with plenty of fruit and a hint of mineral. Pairs well with game, roast meats and mature cheeses. Wine well suited to long ageing. The wine is released six years after the vintage.

Ageing:

Following fermentation, malolactic conversion and a brief decantation, the Brunello di Montalcino is aged in small Slavonian and French oak casks for around 36 months. The outcome is a wine of excellent structure, complexity and depth.

Bottle Ageing:

4 months. The wine is released during the 5th year following the vintage.

Tasting and Pairing:

Deep ruby red to garnet in colour. Elegant and intense on the nose. In the mouth, dry, full, warm and persistent. Pairs well with tasty pasta dishes, game, roast meats and mature cheeses. Wine well suited to long ageing.

The Rosso di Montalcino is fermented in steel tanks at a controlled temperature for 15 – 25 days, with repeated follage to obtain all possible components from the skins.

Ageing:

Following fermentation and malolactic conversion, the Rosso di Montalcino is aged in small Slavonian and French oak casks for around 12 months.

Bottle Ageing:

3 months.

Tasting and Pairing:

Deep ruby red in colour. Elegant and intense on the nose. In the mouth, elegant, sell structured, with plenty of fresh berries on the finish. Pairs well with pasta dishes served with a meat sauce, roast veal and pork and fresh or semi-matured cheeses.

Bellaria - Olio Extravergine d'Oliva

Production Area:

Estate’s own olive groves, at approximately 500 metres above sea level.

Olive Varieties:

Moraiolo, Leccino, Frantoio, Olivastra, Correggiolo.

Production Technique:

The olives are hand harvested and pressed at the “frantoio” daily. The olive oil extraction process is carried out using the traditional Tuscan method.

Organoleptic Characteristics:

Colour: Green with golden yellow hues and chromatic variations.
Perfume: Fruity with hints of almond, artichoke, ripe fruits and green leafs.
Taste: reasonably spicy and lightly bitter with slight grassy hints.

Vinification:

Assunto Riserva is only produced in the best harvests and only in a small quantity, about 300-500 bottles. The grapes are carefully selected after being handpicked from the 30 year-old vines in the same vineyard where Assunto Brunello di Montalcino originates, with a production of about 10-15ql per hectare. The grapes are fermented in temperature-controlled stainless steel vats for about 20-25 days and undergo pumping over and délestage to naturally extract the tannins and colour from the skins as much as possible which is what will give the future wine longevity and structure.

Ageing:

The Assunto Brunello Riserva is aged in Slavonian and French oak barriques for about 40 months. During the maturation period, the wine softens its tannins and slowly absorbs any aromas and fragrances while in contact with the wood, all of which can be found in the glass.

Bottle Ageing:

After ageing, the wine moves to the bottle for a further 6-7 months of refining. The wine is released on the market six years after the harvest.

Tasting and Pairing:

Intense ruby red in colour tending to garnet. Elegant and intense bouquet. On the palate dry, warm, robust and persistent. Excellent with game, roasted red meat, and aged cheese. Wine to lay down or meditation wine.

Vinification:

This wine originates from the best Sangiovese grapes produced in a 30 year-old vineyard which the grandfather Assunto, whom the wine is named after, planted. The yield per hectare is around 30-35 ql. After the harvest the grapes go through fermentation in temperature-controlled steel vats for 20-25 days and undergo pumping over and délestage to maximize the extraction of all the structural components of the wine from the skins giving it longevity and structure.

Ageing:

The Assunto Brunello di Montalcino is aged for about 30 months in small 7.50 hl French and Slavonian oak barrels from which the wine acquires its fragrances and that elegance which is expressed in the glass.

Bottle Ageing:

After ageing in wood, the wine is bottled and refined for six months then released on the market not earlier than five years after the harvest.

Intense ruby red in colour tending to garnet. Elegant and intense bouquet. On the palate, dry, warm, robust and persistent. Excellent with game, roasted red meat, and aged cheese. Wine to lay down.

Vinification:

This wine originates from a careful selection of grapes harvested by hand in our vineyards where the yield per hectare is around 70-80ql. The grapes ferment in temperature-controlled stainless steel vats for about 15-20 days and undergo pumping over and délestage to achieve the best extraction of all the components from the skins, which will give the future wine its colour, structure, freshness and overtones of ripe fruit.

Ageing:

The Assunto Rosso di Montalcino is aged for about 10-12 months in small French and Slavonian oak barrels. During the ageing phase, the wine softens the tannins and slowly absorbs further aromas and fragrances, later found in the glass, as it ages in the various barrels in our cellar.

Bottle Ageing:

After ageing in wood, the wine is bottled and spends a short period of time refining for 2-3 months. It is then released on the market the year after the harvest.

Tasting and Pairing:

Intense ruby red in colour. To taste it has good structure and richness. In the mouth it is clean and elegant with a finish of fruits of the forest like blueberry, currant, raspberry and strawberry. Bouquet is fresh, elegant and intense. Its notable structure also permits for ageing another few years. Excellent with first dishes with a meat sauce, roasted white meat, fresh and medium-aged cheeses.

Vinification:

This Vin Santo originates from the production of two typical white grapes in the Tuscan tradition; Trebbiano and Malvasia. The grapes are harvested and placed in baskets to dry naturally for about 3 months after which time the grapes are pressed and the must starts fermentation. It is then transferred to wood barrels.

Ageing:

The must ages in small 50-100 litre barrels where it stays for a minimum of four years. In this time the vin santo ferments, transforming the sugar into alcohol, and ages by taking on a straw to amber-flecked colour and typical fragrances.

Bottle Ageing:

After ageing in wood, the Assunto Vin Santo ages for a further 8-10 months in glass in order for the sediment from the fermentation and maturation processes to settle at the bottom. It is then bottled without being filtered so as not to lose those characteristics it takes on during ageing.

Tasting and Pairing:

Subtle golden yellow colour. Intense, elegant and fruity bouquet with flowery hints given the drying of the grapes. On the palate pleasant, sweet, very mouthfilling, warm with a sweet finish. Excellent with all desserts especially biscuits and Tuscan Cantucci.
